4 halibut fillets
1 lemon, sliced
1 red onion, finely sliced
1 can beer
2 teaspoons coarse ground pepper
2 teaspoons garlic salt
Make 4 “boats” out of aluminum foil. Make a boat by taking a 12-inch piece of foil and pinching the ends together to create a place to put the halibut.
Put 1 fillet in each boat, then top with 2 or 3 slices of lemon and sliced onion. Making sure the foil surrounds the fillet like a bowl, pour 2 to 3 tablespoons of beer over the top of each fillet. Generously sprinkle with pepper and garlic salt. Seal the tops by folding the foil together.
Carefully place the beer boats on the barbecue grill with a medium flame and cook about 20 minutes, until fully cooked.
