Hearty, healthy, farmers' market vegetable soup

Ingredients:

  • 2/3 cup carrot, sliced
  • 1/2 cup onion, diced
  • 2 garlic gloves, minced
  • 2 tablespoons olive oil
  • 3 cups broth (beef, chicken, vegetable)
  • 1 1/2 cups green cabbage, diced
  • 1 tablespoon tomato paste
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/3 teaspoon salt
  • 1/2 cup zucchini, diced

Instructions:

Saute the carrot, onion and garlic in olive oil over low heat until softened (about five minutes). Add broth, cabbage, beans, tomato paste, basil, oregano and salt. Bring to a boil.

Lower the heat and simmer, covered, about 15 minutes or until the beans are tender. Stir in zucchini and heat 3-4 minutes. Serves 4.
