1 3/4 cups all-purpose flour
1/2 cup plus 2 Tablespoons sugar, divided
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 8 ounce lemon yogurt
1/4 cup vegetable oil
1 large egg
2 Tablespoon grated lemon rind, divided
Paper baking cups
Preheat oven to 400 degrees. Line 12 muffin cups with paper baking cups.
In a large bowl, mix flour, 1/2 cup sugar, baking soda, baking powder and salt.
In a medium bowl, combine yogurt, oil, egg and 2 teaspoons lemon rind.
Add yogurt mixture to flour mixture; stir just until combined.
Pour batter into muffin cups. Combine remaining sugar and lemon rind in a small bowl, mix. Sprinkle evenly over muffin batter.
Bake muffins for 16-18 minutes.
