Beer + Brisket = Perfection

This recipe comes from the Standard-Examiner Recipe Exchange Cookbook and was submitted by Louise Forgach.

4 pounds beef brisket

1/2 teaspoon pepper

1 large onion, sliced and separated into rings

1/2 cup chili sauce

3 tablespoons brown sugar

2 cloves garlic, pressed

3/4 cup beer

Trim as much fat as possible from brisket and cut in half. Sprinkle with pepper. Place onion rings in bottom of slow cooker; top with brisket. Stir together chili sauce, brown sugar, garlic and beer. Pour over brisket. Cover and cook on high 4 to 6 hours, or on low 8 to 12 hours. Remove brisket and set aside. Thinly slice across the grain. Liquid may be discarded or thickened and served over brisket.
